Ingredients
  

  • All-purpose Flour 1.5 Cups
  • Granulated Sugar 1 Cup
  • Cream Cheese 4 Oz
  • Unsalted Butter 0.5 Cup
  • Fresh Blueberries 1 Cup
  • Large Eggs 2
  • Baking Powder 1.5 Tsp
  • Vanilla Extract 1 Tsp
  • Salt 0.25 Tsp

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit. Grease your loaf pan with butter. Sprinkle a little flour inside the pan. This stops the bread from sticking.
  • Whisk the flour and baking powder together. Add the salt to the dry mix. Set this bowl aside for later. This ensures a very even rise.
  • Beat the soft butter and sugar now. Use your electric mixer for this. The mix should look very pale. This takes about three minutes total.
  • Add the cream cheese to the bowl. Beat it until the lumps go away. It should look very smooth and light. This adds the best creamy texture.
  • Mix in the eggs one by one. Add the vanilla extract at this time. Scrape the sides of the bowl often. This mixes everything very well.
  • Slowly add the dry flour mixture. Mix on a very low speed. Stop as soon as flour disappears. Do not overmix the batter now.
  • Toss your blueberries in a little flour. Gently fold them into the batter. Use a spatula for this part. This keeps the batter from turning blue.
  • Pour the batter into the loaf pan. Smooth the top with your spatula. Bake for sixty to seventy minutes. A toothpick should come out clean.

  • Use room temperature eggs for better mixing.
  • Do not overmix the batter at all.
