Chef Knife
- Elbow Macaroni 8 Oz
- Sour Cream 1 Cup
- Mayonnaise 1/2 Cup
- Cheddar Cheese 1 Cup
- Red Onion 1/2 Cup
- Stalks Celery 2
- Apple Cider Vinegar 1 Tbsp
- Sugar 1 Tsp
- Salt 1/2 Tsp
- Black Pepper 1/2 Tsp
Boil a large pot of salted water first. Add your elbow macaroni to the boiling water carefully. Cook it until it is soft but firm. Do not overcook the pasta or it breaks.
Drain the cooked pasta in a large colander. Rinse the noodles with very cold water now. This stops the cooking process right away. Let the pasta sit until it is dry.
Grab your large mixing bowl for the dressing. Combine the sour cream and the mayonnaise together. Whisk them until the mixture is very smooth. Add the vinegar and the sugar next.
Chop your red onion and celery into small pieces. Dice the cheddar cheese into tiny little cubes. Add these ingredients to the bowl of dressing. Stir them gently with a large spoon.
Pour the cooled macaroni into the dressing bowl. Toss everything together until the pasta is coated. Use a gentle folding motion to avoid mashing. Add salt and pepper to your taste.
Cover the bowl with some plastic wrap tightly. Put the salad in the fridge for one hour. This allows the flavors to blend together well. Serve it cold to your happy guests.
- Always salt your pasta water for better flavor.
- Rinse pasta with cold water to remove excess starch.
- Cut cheese cubes into very small uniform sizes.
- Use full-fat sour cream for the richest dressing.
- Let the salad chill before you serve it.
- Taste the salad again before adding extra salt.
