Ingredients
  

  • large Chicken Breasts halved and pounded thin 2
  • All-Purpose Flour 1/2 cup
  • Butter 3 tbsp
  • Extra Virgin Olive Oil 2 tbsp
  • Fresh Lemon Juice 1/3 cup
  • Chicken Stock 1/2 cup
  • Capers 1/4 cup
  • Fresh Parsley 1/4 cup
  • Sea Salt 1 tsp
  • Black Pepper 1/2 tsp

Instructions
 

  • Prepare the Meat: Butterfly the chicken breasts first. Use a mallet to make them thin.
  • Season the Flour: Mix salt and pepper into the flour. Put it in a shallow bowl.
  • Coat the Chicken: Press each piece into the flour mixture. Shake off any extra flour.
  • Heat the Pan: Put oil and butter in the skillet. Wait until the butter melts and bubbles.
  • Brown the Chicken: Cook the chicken for three minutes per side. Remove it and set it aside.
  • Make the Sauce: Pour stock and lemon juice into the pan. Add the capers and stir well.
  • Simmer the Liquid: Let the sauce boil for five minutes. It should thicken up a little bit.
  • Final Step: Put the chicken back into the pan. Pour the sauce over the meat and serve.

Notes

➔ Pound the chicken to an even thickness for cooking.
➔ Do not crowd the pan while frying the chicken.
➔ Use fresh lemon juice for the very best flavor.
➔ Rinse the capers to remove excess salt before adding.
➔ Cold butter at the end makes the sauce glossy.
➔ Keep the heat on medium to avoid burning butter.
