- large Chicken Breasts halved and pounded thin 2
- All-Purpose Flour 1/2 cup
- Butter 3 tbsp
- Extra Virgin Olive Oil 2 tbsp
- Fresh Lemon Juice 1/3 cup
- Chicken Stock 1/2 cup
- Capers 1/4 cup
- Fresh Parsley 1/4 cup
- Sea Salt 1 tsp
- Black Pepper 1/2 tsp
Prepare the Meat: Butterfly the chicken breasts first. Use a mallet to make them thin.
Season the Flour: Mix salt and pepper into the flour. Put it in a shallow bowl.
Coat the Chicken: Press each piece into the flour mixture. Shake off any extra flour.
Heat the Pan: Put oil and butter in the skillet. Wait until the butter melts and bubbles.
Brown the Chicken: Cook the chicken for three minutes per side. Remove it and set it aside.
Make the Sauce: Pour stock and lemon juice into the pan. Add the capers and stir well.
Simmer the Liquid: Let the sauce boil for five minutes. It should thicken up a little bit.
Final Step: Put the chicken back into the pan. Pour the sauce over the meat and serve.
