- Sheets lasagna pasta 12
- Large zucchini 2
- Medium eggplant 1
- Garlic 2 cloves
- Large onion 1
- Tomato puree 500 ml
- Ricotta cheese 250 g
- Mozzarella cheese 200 g
- Parmesan cheese 50 g
- Fresh spinach 100 g
- Olive oil 2 tbsp
- Dried oregano 1 tsp
- Bunch fresh basil 1
Prepare the Vegetables: Slice your zucchini and eggplant thin. Sauté them in olive oil until soft.
Make the Red Sauce: Fry onions and garlic in a pan. Add tomato puree and dried herbs. Simmer for ten minutes.
Mix the Cheese: Stir ricotta with salt and pepper. Add a little chopped basil for flavor.
Start the Layers: Spread some red sauce in the dish. Lay down your first pasta sheets.
Add the Filling: Spread the ricotta over the pasta. Top it with the sautéed vegetables.
Repeat the Process: Add more sauce and more pasta. Keep layering until the dish is full.
Top with Cheese: Sprinkle lots of mozzarella on top. Add parmesan for a golden crust.
Bake the Dish: Put it in the oven at 200°C. Bake for thirty minutes until it bubbles.
