Ingredients
  

  • Beef Brisket 2 Kg
  • Large Onions 2
  • Medium Carrots 3
  • Sticks Celery 2
  • Garlic 3 Cloves
  • Beef Stock 500 ML
  • Red Wine 200 ML
  • Tomato Paste 1 Tbsp
  • Sprigs Fresh Thyme 4
  • Bay Leaves 2 Pieces
  • Vegetable Oil 2 Tbsp
  • Salt 1 Tsp
  • Black Pepper 1 Tsp

Instructions
 

  • Preheat your oven to 150°C. This low heat is perfect for slow cooking. Season your beef with salt and pepper.
  • Heat oil in your large casserole pot. Place the beef inside the hot pot carefully. Brown the meat on all sides for color.
  • Remove the beef and set it aside. Add your chopped onions and carrots to the pot. Cook them until they start to soften.
  • Stir in the garlic and tomato paste now. Pour in the red wine and beef stock. Stir well to mix all the flavors.
  • Place the beef back into the liquid. Add your fresh thyme and bay leaves. Make sure the liquid covers half the meat.
  • Put the lid on the pot very tightly. Place the pot into the warm oven. Let it cook for four long hours.
  • Check the beef after four hours of cooking. It should be very tender and soft now. Take the pot out of the oven.
  • Let the meat rest for fifteen minutes first. This keeps the juices inside the beef. Slice it against the grain for serving.

Notes

  • Choose a brisket with a good fat cap.
  • Always brown the meat before you start braising.
  • Keep the oven temperature low and very steady.
  • Make sure the lid fits the pot perfectly.
  • Add more stock if the liquid gets too low.
  • Do not skip the resting time for the meat.
  • Slice the beef thinly for the best texture.
