Ingredients
  

  • Spaghetti 400 g
  • Pancetta 150 g
  • Large Eggs 3
  • Pecorino Romano 50 g
  • Black Pepper 1 Tsp
  • Salt 1 Pinch

Instructions
 

  • Fill a large pot with plenty of water. Add a big pinch of salt to it. Bring the water to a rolling boil now.
  • Add the spaghetti to the boiling water. Cook it until it is firm to bite. This is called al dente in Italian cooking.
  • Cut your meat into small, even pieces. Place them in a cold frying pan. Turn the heat to medium to start cooking.
  • Fry the meat until it is very crispy. The fat should melt into the pan. This fat will flavor your entire pasta dish.
  • Crack the eggs into your mixing bowl. Add the grated cheese and black pepper. Whisk them together until the mix is smooth.
  • Drain the pasta but save some water. Keep about half a cup of the starchy water. This helps the sauce stick to the noodles.
  • Add the hot pasta to the bacon pan. Turn off the heat before the next step. This prevents the eggs from scrambling too fast.
  • Pour the egg and cheese mix over pasta. Toss everything together very quickly and gently. Add a splash of pasta water if needed.

  • Always use room temperature eggs for a smoother sauce.
  • Never add the eggs to a boiling hot pan.
  • Save your pasta water to make the sauce silky.
  • Grate your own cheese for the best melting quality.
