- Spaghetti 400 g
- Pancetta 150 g
- Large Eggs 3
- Pecorino Romano 50 g
- Black Pepper 1 Tsp
- Salt 1 Pinch
Fill a large pot with plenty of water. Add a big pinch of salt to it. Bring the water to a rolling boil now.
Add the spaghetti to the boiling water. Cook it until it is firm to bite. This is called al dente in Italian cooking.
Cut your meat into small, even pieces. Place them in a cold frying pan. Turn the heat to medium to start cooking.
Fry the meat until it is very crispy. The fat should melt into the pan. This fat will flavor your entire pasta dish.
Crack the eggs into your mixing bowl. Add the grated cheese and black pepper. Whisk them together until the mix is smooth.
Drain the pasta but save some water. Keep about half a cup of the starchy water. This helps the sauce stick to the noodles.
Add the hot pasta to the bacon pan. Turn off the heat before the next step. This prevents the eggs from scrambling too fast.
Pour the egg and cheese mix over pasta. Toss everything together very quickly and gently. Add a splash of pasta water if needed.
