Ingredients
  

  • Chicken Thighs 600 g
  • Large Onions 2
  • Medium Carrots 2
  • Stalk Celery 1
  • Chicken Stock 400 ML
  • Heavy Cream 100 ML
  • Self-raising Flour 250 g
  • Butter 50 g
  • Cheddar Cheese 100 g
  • Thyme 1 Tsp
  • Brussel Sprouts 1 Tbsp

Instructions
 

  • Cut your chicken into small, bite-sized pieces first. Season them with a little salt and black pepper. Heat some oil in your large frying pan.
  • Place the chicken pieces into the hot pan now. Fry them until they look golden and cooked. Move the chicken to your large casserole dish.
  • Add the chopped onions and carrots to the pan. Cook them until they become soft and fragrant. This should take about five to seven minutes.
  • Sprinkle a little flour over the cooked vegetables now. Pour in the chicken stock and the heavy cream. Stir it well until the sauce starts thickening.
  • Pour the creamy vegetable sauce over the chicken meat. Stir everything together in the casserole dish gently. Make sure the chicken is fully covered.
  • Rub the butter into the flour with your fingers. It should look like small, fine breadcrumbs very soon. Stir in the cheese and a little milk.
  • Roll the dough out on a floured surface. Cut out small circles using a round cutter. Place these dough circles on top of the chicken.
  • Put the dish into a preheated hot oven. Bake it for about twenty-five to thirty minutes. The topping should be tall and golden brown.

Notes

  • Keep your butter cold for a flakier cobbler topping.
  • Do not overwork the dough or it gets tough.
  • Use chicken thighs instead of breast for more flavor.
  • Let the filling cool slightly before adding the topping.
  • Add a splash of wine for extra sauce depth.
