Ingredients
  

  • Cooked Chicken Breast 500 g
  • Mayonnaise 4 Tbsp
  • Greek Yogurt 2 Tbsp
  • Mild Curry Powder 1 Tbsp
  • Apricot Jam 1 Tbsp
  • Lemon Juice 1 Tbsp
  • Sultanas 50 g
  • Flaked Almonds 30 g
  • Fresh Coriander 1 Tbsp
  • Salt And Pepper 1 Pinch

Instructions
 

  • Place your mayonnaise and yogurt in the large bowl. Add the curry powder and apricot jam to it. Whisk these together until the sauce is very smooth.
  • Squeeze in the fresh lemon juice and stir again. Season the mixture with a little salt and pepper. Taste it to make sure the spice level is right.
  • Add the diced chicken and sultanas into the bowl. Fold them gently so the chicken does not break. Ensure every single piece is covered in yellow sauce.
  • Heat the small pan over a medium stove flame. Add the almond flakes and toss them for one minute. Remove them once they turn a light golden brown.
  • Sprinkle the toasted almonds over the top of the chicken. Add the chopped coriander just before you serve it. Your delicious meal is now ready to enjoy.
