- Large Lamb Shanks 4
- Medium Onions 2
- Large Carrots 3
- Garlic 3 Cloves
- Red Wine 300 ML
- Beef Stock 500 ML
- Tomato Puree 2 Tbsp
- Sprigs Fresh Rosemary 2
- Olive Oil 2 Tbsp
Preheat your oven to 160 degrees Celsius. Season your lamb shanks with salt and pepper. Rub the seasoning into the meat very well.
Heat oil in your large casserole pot. Place the lamb shanks in the hot oil. Brown them on all sides until dark gold.
Remove the meat and set it aside. Add the onions and carrots to the pot. Fry them until they start to soften slightly.
Stir in the garlic and the tomato puree. Cook these for just one or two minutes. This removes the raw taste of the puree.
Pour in the red wine and the stock. Add the rosemary sprigs to the liquid now. Stir everything together to mix the flavors well.
Put the lamb shanks back into the pot. Make sure the liquid covers most of the meat. Bring the liquid to a very gentle simmer.
Put the lid on the pot very tightly. Place the pot in the preheated oven. Cook it for two and a half hours.
Check the meat after the time is up. It should be very tender and soft. Remove the lid for the final thirty minutes.
