- Pork Tenderloin 500 g
- Chestnut Mushrooms 250 g
- Large Onion 1
- Garlic 2 Cloves
- Smoked Paprika 1 Tbsp
- Sour Cream 150 ML
- Pork Stock 100 ML
- Oil 1 Tbsp
- Handful Fresh Parsley 1
- Salt And Pepper 1 Pinch
Slice the pork tenderloin into thin strips. Make sure they are all the same size. Season the meat with salt and black pepper.
Heat a small amount of oil in the pan. Use medium-high heat for the best sear. Place the pork strips in the hot oil.
Brown the meat quickly on all sides. Do not overcook the pork at this stage. Remove the meat and set it aside.
Add the sliced onions to the same pan. Fry them until they are soft and translucent. Add the sliced mushrooms to the onions now.
Cook the mushrooms until they turn golden brown. Stir in the minced garlic and the paprika. Cook for one minute until it smells great.
Pour in the pork stock and let it bubble. Use your spoon to scrape the pan bottom. This adds so much flavor to the liquid.
Turn the heat down to a low simmer. Stir in the sour cream very slowly. Do not let the sauce boil now.
Add the cooked pork back into the sauce. Let it warm through for two minutes. Sprinkle the fresh parsley over the top.
- Always slice the pork against the natural grain.
- Use room temperature sour cream to prevent curdling.
- Do not crowd the pan when browning meat.
- Add a splash of lemon juice for brightness.
- Use fresh paprika for the most vibrant color.
- Keep the heat low once adding the cream.
- Slice mushrooms thickly so they do not shrink.
