Ingredients
  

  • Pork Sausages 8
  • Smoked Bacon 100 g
  • Onions 2
  • Red Peppers 2
  • Garlic Cloves 2
  • Paprika 1 Tsp
  • Chopped Tomatoes 400 g
  • Chicken Stock 300 ML
  • Cannellini Beans 400 g
  • Dried Thyme 1 Tsp
  • Vegetable Oil 1 Tbsp

Instructions
 

  • Brown the Sausages. Heat a pan over medium heat. Add a little bit of oil. Place sausages in the hot pan. Cook them until they are brown. Turn them often for even color. Remove them and set aside now.
  • Cook the Bacon and Veg. Fry the bacon in the same pan. Add the onions and peppers next. Cook until they are soft. This takes about five minutes. Stir them gently with your spoon. Do not let them burn.
  • Add Spices and Garlic. Stir in the chopped garlic now. Add the paprika and thyme too. Cook for just one minute. You will smell the lovely spices. It creates a great flavor base. Keep the heat on medium.
  • Combine the Liquids. Pour in the canned chopped tomatoes. Add the chicken stock slowly. Stir everything together very well. Scrape the bottom of the pan. This picks up all the flavor. Bring it to a light simmer.
  • Simmer the Casserole. Put the sausages back in. Cover the pot with a lid. Cook on low for thirty minutes. The sauce will get very thick. The sausages will finish cooking inside. It smells amazing right now.
  • Add the Beans. Stir in the drained cannellini beans. Cook for five more minutes. This heats the beans through. Check the seasoning of your sauce. Add salt or pepper if needed. Your meal is now ready.
