Ingredients
  

  • Lamb Neck On The Bone 750 g
  • Pearl Barley 100 g
  • Yellow Split Peas 100 g
  • Carrots Diced 2
  • Swede Diced 1
  • Leeks Sliced 2
  • Stalks Celery Sliced 2
  • Water 2 Liters
  • Bunch Parsley Fresh 1
  • Salt 1 Tsp
  • Black Pepper 1 Tsp

Instructions
 

  • Place your lamb neck pieces into the large pot. Cover the meat completely with cold water. Bring the water to a boil very quickly. This helps clean the meat before the real cooking.
  • Drain the hot water and rinse the lamb well. Put the cleaned meat back into the pot. Add two liters of fresh cold water now. This will be your rich soup base.
  • Turn the stove to a medium-high heat. Bring the pot back to a rolling boil. Use your skimmer spoon to remove gray foam. This keeps the liquid clear and nice.
  • Add the pearl barley and split peas now. Stir them into the water with your spoon. Lower the heat to a gentle simmer. Cover the pot with the lid tightly.
  • Let the meat and grains cook for one hour. The grains will start to get very soft. The kitchen will start to smell wonderful now. Keep the heat low and steady.
