Ingredients
  

  • Pork Shoulder 1 Kg
  • Vegetable Oil 2 Tbsp
  • Large Yellow Onions 2
  • Fresh Garlic 3 Cloves
  • Medium Red Chili Peppers 2
  • Smoked Paprika 1 Tbsp
  • Ground Cumin 1 Tsp
  • Canned Tomatoes 400 G
  • Chicken Stock 500 ML
  • Large Bell Peppers 2
  • Honey 1 Tbsp

Instructions
 

  • Cut the pork into small bite-sized cubes. Pat the meat dry with a paper towel. This helps it brown much better.
  • Heat the oil in your large heavy pan. Add the pork chunks in small batches. Brown them until they look golden and crispy.
  • Remove the meat and set it aside. Add the chopped onions to the same pan. Cook them until they are soft and translucent.
  • Stir in the garlic and the chili peppers. Add the paprika and the cumin now. Fry them for one minute to release oils.
  • Put the browned pork back into the pan. Pour in the canned tomatoes and chicken stock. Stir everything together until well combined.
  • Bring the liquid to a gentle boil. Reduce the heat to a very low setting. Cover the pan with a tight lid.
  • Simmer the pork for about one hour. Add the bell peppers and the honey now. Cook for thirty more minutes until tender.

  • Use fresh spices for the best possible flavor.
  • Brown the meat in batches to avoid steaming.
  • Do not rush the low simmering process today.
  • Taste the sauce before adding any extra salt.
  • Use a heavy pot to prevent burning food.
  • Cut all pork pieces into the same size.
