Ingredients
  

  • Dried Dates 200 g
  • Boiling Water 200 ML
  • Bicarbonate Of Soda 1 Tsp
  • Unsalted Butter 75 g
  • Large Eggs 2
  • Muscovado Sugar 175 g
  • Self-raising Flour 175 g
  • Vanilla Extract 1 Tsp
  • Double Cream 150 ML
  • Black Treacle 1 Tbsp

Instructions
 

  • Chop your dried dates into very small pieces. Put them in a bowl with boiling water. Add the bicarbonate of soda and let it sit.
  • Mix the butter and sugar in a big bowl. Use your whisk until the mix is very pale. It should look light and feel quite fluffy.
  • Break your eggs into the bowl one by one. Whisk well after you add each single egg. Add a splash of vanilla for a nice smell.
  • Sift your flour into the wet cake mixture. Use a spoon to fold it in very gently. Do not overmix or the cake will be tough.
  • Pour the soaked dates and their liquid into the bowl. Stir everything until it looks like a thick batter. It will smell very sweet and delicious now.
  • Pour the batter into your greased baking dish. Bake it in the oven at 180°C. Wait for thirty to thirty-five minutes until firm.
  • Put butter, sugar, and treacle in a small pan. Melt them over low heat until they are smooth. Pour in the cream and let it bubble.
  • Poke small holes in the warm, baked sponge. Pour half of the hot sauce over the cake. Let it soak in for a few minutes.

Notes

  • Use room temperature eggs so the batter does not split.
  • Do not overbake the sponge or it will become dry.
  • Always use dark muscovado sugar for the best dark color.
  • Sift the flour to keep the pudding light and airy.
  • Pour the sauce while the cake is still very warm.
  • Make sure the dates are very soft before mixing them.
  • Use a high-quality vanilla extract for a better aroma.
