- Raspberries 2 Cups
- Water 1/2 Cup
- Honey 2 Tbsp
- Lemon Juice 1 Tbsp
- Unflavored Gelatin 3 Tbsp
Wash your fresh berries very well. Put them into your high-speed blender. Blend them until they are completely liquid.
Pour the puree through a fine strainer. Press it with a spoon to get juice. Throw away the seeds left in the mesh.
Put the juice into your small saucepan. Add your honey and the lemon juice. Do not turn on the heat yet.
Sprinkle the gelatin over the cold juice. Let it sit for five minutes now. This is called blooming the gelatin.
Turn the stove to low heat. Whisk the mixture constantly for two minutes. Do not let the liquid boil.
Wait until the gelatin is totally melted. The liquid should look clear and smooth. Remove the pan from the heat.
Use the dropper to fill your molds. Work quickly before the mixture gets thick. Fill them all the way to the top.
Place the molds in the refrigerator. Let them chill for at least one hour. They must be firm before you pop them out.
