Ingredients
  

  • Granny Smith Apples 2 Lbs
  • Bosc Pears 2 Lbs
  • Orange Zest 1 Tsp
  • Orange Juice 2 Tbsp
  • Granulated Sugar 1/2 Cup
  • All-purpose Flour 1/4 Cup
  • Ground Cinnamon 1 Tsp
  • Ground Nutmeg 1/2 Tsp
  • All-purpose Flour For Topping 1 1/2 Cups
  • Granulated Sugar For Topping 3/4 Cup
  • Light Brown Sugar 3/4 Cup
  • Kosher Salt 1/2 Tsp
  • Quick-cooking Oats 1 Cup
  • Unsalted Butter 1/2 Lb

Instructions
 

  • Prepare the Fruit Base: Peel and slice the apples and pears first. Put them in a very large bowl. Add the orange juice and the orange zest. Toss them well so the fruit stays bright.
  • Season the Filling: Add the white sugar to the fruit. Sprinkle in the cinnamon and the nutmeg. Add a little bit of flour to thicken. Mix everything until the fruit is well coated.
  • Make the Topping: Put flour and brown sugar in a bowl. Add the cold butter and the oats. Mix until the mixture looks like small peas. Do not overmix the dough.
  • Layer the Dish: Pour the fruit into your baking dish. Spread it out so it is very even. Sprinkle the oat topping over the top. Cover all the fruit with the crumbs.
  • Bake Until Golden: Put the dish into a hot oven. Bake it until the topping is brown. The fruit juices should be bubbling. Let it sit for a few minutes.
