Ingredients
  

  • Unsalted Butter 225 g
  • Sugar 1.5 Cups
  • Vanilla Extract 1 Tsp
  • Large Eggs 2
  • Creamy Peanut Butter 2 Cups
  • All-purpose Flour 3 Cups
  • Baking Powder 1 Tsp
  • Kosher Salt 1.5 Tsp
  • Raspberry Jam 1.5 Cups
  • Salted Peanuts 0.5 Cups

Instructions
 

  • Preheat your oven to 350 degrees now. Grease your rectangular baking pan very well. Line it with some parchment paper too.
  • Cream the butter and sugar together. Use your mixer on a medium speed. Do this until the mix is light.
  • Add the peanut butter and vanilla. Then add your eggs one by one. Mix everything until the batter is smooth.
  • Sift the flour and baking powder together. Add the salt to the dry mix. Slowly add this to the wet mix.
  • Spread two-thirds of the dough in the pan. Use a spatula to make it flat. This is your bottom crust layer.
  • Spread the jam over the bottom dough. Leave a small border around the edges. This keeps the jam from burning.
  • Drop small bits of remaining dough on top. Sprinkle the chopped peanuts over the jam. These will turn golden and crunchy.
  • Bake the bars for forty-five minutes. The top should look golden brown. Let them cool completely before you cut.
