Ingredients
  

  • Chicken Thighs 1 Lb
  • Soy Sauce 2 Tbsp
  • Sake 1 Tbsp
  • Fresh Ginger Grated 1 Tsp
  • Garlic Minced 1 Tsp
  • Sesame Oil 1 Tsp
  • Potato Starch 1/2 Cup
  • Vegetable Oil 2 Cups
  • Unit Lemon Cut Into Wedges 1/2

Instructions
 

  • Cut the chicken into bite-sized cubes. Make sure all pieces are the same size. This helps them cook at the same rate.
  • Place chicken in a large mixing bowl. Add soy sauce, ginger, garlic, and sake. Mix everything well with your hands.
  • Let the chicken sit for twenty minutes. This allows the flavors to soak in. The meat will become very tasty.
  • Drain any excess liquid from the bowl. Add the potato starch to the chicken. Coat every single piece thoroughly and evenly.
  • Heat oil in your large pot. Wait until it reaches 350 degrees Fahrenheit. Carefully drop a few pieces into the oil.
  • Fry the chicken for about four minutes. The crust should look golden brown. Remove the pieces and let them rest.
  • Increase the oil heat slightly for a second fry. Fry them again for one minute. This makes the chicken extra crunchy.

Notes

  • Use chicken thighs for the best juicy results.
  • Do not crowd the pot during the frying process.
  • Always use a thermometer to check oil heat levels.
  • Double fry the chicken for a perfect crispy crust.
  • Marinate for at least twenty minutes for deep flavor.
