Ingredients
  

  • Kale Chopped 6 Cups
  • Bacon Chopped 8 Slices
  • Heavy Cream 1 Cup
  • Large Eggs 4
  • Small Onion Diced 1
  • Garlic Minced 3 Cloves
  • Cheddar Cheese Shredded 1.5 Cups
  • Breadcrumbs 1/2 Cup
  • Butter 2 Tbsp
  • Salt 1 Tsp
  • Black Pepper 1/2 Tsp

Instructions
 

  • Cook the Bacon: Put the bacon in a cold skillet. Turn on the heat to medium. Fry until the bacon is very crispy. Remove it and let it drain on paper.
  • Sauté the Veggies: Keep some bacon fat in the pan. Add the chopped onions and garlic. Cook until they are soft and smell good.
  • Wilting the Kale: Add the kale to the skillet. Stir it until it turns bright green. It should shrink down in size quite a bit.
  • Mix the Liquid: Whisk the eggs and cream together. Add the salt and pepper to the bowl. Stir in half of the shredded cheese now.
  • Layer the Dish: Put the kale mixture in the baking dish. Crumble the crispy bacon over the top. Pour the egg mixture over everything evenly.
  • Bake the Casserole: Sprinkle the remaining cheese and breadcrumbs. Put it in the oven at 375 degrees. Bake until the top is golden and bubbly.
