Measuring Spoons
- Chicken Breasts 1.5 Lbs
- Olive Oil 2 Tbsp
- Butter 3 Tbsp
- Garlic 4 Cloves
- Whole Lemons 2
- Salt 1 Tsp
- Black Pepper 1/2 Tsp
- Fresh Parsley 2 Tbsp
Pat the chicken breasts dry with paper towels. Place them between two pieces of plastic wrap. Pound them until they are even in thickness.
Season both sides of the meat with salt. Add a generous amount of black pepper too. This helps build a savory crust during cooking.
Heat the olive oil in your large skillet. Place the chicken into the hot pan carefully. Cook each side for about six minutes.
Remove the chicken and set it on a plate. Lower the stove heat to a medium setting. Melt the butter in the same warm skillet.
Add the minced garlic to the melted butter. Stir it for thirty seconds until it smells good. Squeeze the fresh lemon juice into the pan.
Whisk the sauce to scrape up the brown bits. Place the chicken back into the bubbly sauce. Spoon the sauce over the meat for one minute.
- Use fresh lemons instead of bottled juice for flavor.
- Do not overcook the chicken or it becomes dry.
- Let the meat rest for five minutes before slicing.
- Make sure the skillet is very hot before searing.
- Mince the garlic finely so it blends into sauce.
- Add a splash of chicken broth for more sauce.
