Ingredients
  

  • Chicken Breasts 1.5 Lbs
  • Olive Oil 2 Tbsp
  • Butter 3 Tbsp
  • Garlic 4 Cloves
  • Whole Lemons 2
  • Salt 1 Tsp
  • Black Pepper 1/2 Tsp
  • Fresh Parsley 2 Tbsp

Instructions
 

  • Pat the chicken breasts dry with paper towels. Place them between two pieces of plastic wrap. Pound them until they are even in thickness.
  • Season both sides of the meat with salt. Add a generous amount of black pepper too. This helps build a savory crust during cooking.
  • Heat the olive oil in your large skillet. Place the chicken into the hot pan carefully. Cook each side for about six minutes.
  • Remove the chicken and set it on a plate. Lower the stove heat to a medium setting. Melt the butter in the same warm skillet.
  • Add the minced garlic to the melted butter. Stir it for thirty seconds until it smells good. Squeeze the fresh lemon juice into the pan.
  • Whisk the sauce to scrape up the brown bits. Place the chicken back into the bubbly sauce. Spoon the sauce over the meat for one minute.

Notes

  • Use fresh lemons instead of bottled juice for flavor.
  • Do not overcook the chicken or it becomes dry.
  • Let the meat rest for five minutes before slicing.
  • Make sure the skillet is very hot before searing.
  • Mince the garlic finely so it blends into sauce.
  • Add a splash of chicken broth for more sauce.
