- All-purpose Flour 1.5 Cups
- Granulated Sugar 1 Cup
- Baking Powder 1.5 Tsp
- Salt 0.5 Tsp
- Unsalted Butter 0.5 Cup
- Large Eggs 2
- Milk 0.5 Cup
- Mango Puree 0.5 Cup
- Strawberry Jam 0.25 Cup
- Vanilla Extract 1 Tsp
- Cream Cheese 8 Oz
Preheat your oven to 350 degrees Fahrenheit. Line your cupcake pan with paper liners. This prepares your kitchen for baking success.
Whisk the flour and baking powder in a bowl. Add the salt and sugar to the mix. Set this dry mixture aside for a moment.
Beat the soft butter and eggs in another bowl. Stir in the milk and vanilla extract slowly. Mix until the liquid looks very smooth.
Pour the wet ingredients into the dry flour. Stir gently until you see no more white. Do not overmix the batter at this stage.
Fold in the mango puree using a big spatula. The batter will turn a beautiful yellow color. It will smell very tropical and sweet now.
Fill each cupcake liner halfway with the yellow batter. Drop a small spoon of strawberry jam inside. Cover the jam with more mango batter carefully.
Bake the cupcakes for about twenty minutes. Check them with a toothpick in the center. Let them cool completely on a wire rack.
Mix cream cheese and butter for the frosting. Add pink and orange food coloring for sunset. Pipe the swirls on top of each cupcake.
