Equipment

  • Large mixing bowl
  • Electric Hand Mixer
  • Box Grater
  • 9-inch Cake Pan
  • Parchment paper
  • Wire cooling rack

Ingredients

  • All-purpose Flour 2 Cups
  • Baking Soda 1 Tsp
  • Cinnamon 1 Tsp
  • Cloves 1/2 Tsp
  • Honey 1 Cup
  • Vegetable Oil 3/4 Cup
  • Large Eggs 3
  • Grated Apples 2 Cups
  • Salt 1/2 Tsp

Instructions

  • Preheat your oven to 325 degrees Fahrenheit. Grease your cake pan well with oil or butter. Line the bottom with a round piece of parchment paper.
  • Whisk the flour and baking soda in a bowl. Add the cinnamon, cloves, and a pinch of salt. Set this dry mixture aside for a few minutes.
  • Beat the honey and oil in a large bowl. Add the eggs one at a time while mixing. Ensure the liquid looks smooth and very well combined.
  • Grate the apples using the large holes of your grater. Fold the shredded apples into the wet honey mixture. Stir gently so you do not lose the juice.
  • Add the dry flour mixture to the wet ingredients. Mix until you see no more white flour streaks. Do not overmix the batter or it gets tough.
  • Pour the batter into your prepared baking pan. Smooth the top with a spatula or a spoon. Bake for about fifty to sixty minutes until firm.

Notes

  • Use fresh honey for the best and brightest floral flavor.
  • Do not peel the apples to add extra fiber and color.
  • Measure your flour correctly by leveling off the measuring cup.
  • Let the cake cool completely before you try to slice it.
  • Check the center with a toothpick to ensure it is done.
