Ingredients
  

  • All-Purpose Flour 2 cups
  • Unsweetened Cocoa Powder 3/4 cup
  • Baking Soda 2 tsp
  • Salt 1 tsp
  • large Eggs 2
  • Buttermilk 1 cup
  • Vegetable Oil 1/2 cup
  • Vanilla Extract 1 tbsp
  • Pitted Sour Cherries 2 cups
  • Heavy Whipping Cream 3 cups
  • Kirsch or Cherry Brandy 1/4 cup
  • Dark Chocolate Shavings 4 oz

Instructions
 

  • Bake the Layers: First, bake three chocolate cakes and cool them.
  • Prepare the Cherries: Drain the cherries and save the sweet juice.
  • Make the Syrup: Simmer the juice with sugar and some brandy.
  • Whip the Cream: Beat the cold cream until it is thick.
  • Brush the Cake: Soak the first layer with the cherry syrup.
  • Add the Filling: Spread cream and drop cherries on the layer.
  • Stack the Cake: Repeat these steps for the middle cake layer.
  • Frost the Outside: Cover the whole cake with the white cream.
  • Decorate the Top: Add chocolate shavings and extra cherries on top.

Notes

➔ Use room temperature eggs for a much smoother cake batter.
➔ Always sift the cocoa powder to remove any large lumps.
➔ Do not overmix the batter or the cake becomes tough.
➔ Make sure the cakes are fully cool before adding cream.
➔ Chill the mixing bowl before whipping the heavy cream.
➔ Use a serrated knife to level the cake tops evenly.
➔ Brush the syrup generously to keep the sponge very moist.
