- Unsalted Butter 1/2 Cup
- Granulated Sugar 3/4 Cup
- Large Egg 1
- All Purpose Flour 2 Cups
- Baking Powder 2 Tsp
- Salt 1/2 Tsp
- Whole Milk 1/2 Cup
- Fresh Blueberries 2 Cups
- Ground Cinnamon 1/2 Tsp
Preheat your oven to 375 degrees Fahrenheit. Grease your baking pan with some butter. This stops the cake from sticking later.
Whisk the flour and baking powder together. Add a pinch of salt to this mix. Set this dry mixture aside for now.
Cream the butter and sugar in a bowl. Use your mixer on a medium speed. The mix should look light and fluffy.
Add the egg to the butter mix. Beat it well until it is smooth. Now add the milk and flour slowly. Mix it until just combined.
Fold the blueberries into the batter gently. Use a spatula for this part. Do not break the berries while mixing.
Spread the batter into your prepared pan. Smooth the top with your spatula. Make sure it reaches every single corner.
Mix sugar and cinnamon for the topping. Sprinkle this over the batter evenly. This creates the signature buckle look.
Bake the cake for about 40 minutes. The top should be golden brown. A toothpick should come out very clean.
- Use fresh berries for the best flavor possible.
- Do not overmix the cake batter at all.
- Grease the pan well to avoid any sticking.
- Let the cake cool before you slice it.
- Toss berries in flour to stop them sinking.
