Equipment

  • Baking pan
  • Mixing bowls
  • Electric mixer
  • Rubber spatula
  • Measuring Cups
  • Measuring Spoons
  • Wire Rack

Ingredients

  • Unsalted Butter 1/2 Cup
  • Granulated Sugar 3/4 Cup
  • Large Egg 1
  • All Purpose Flour 2 Cups
  • Baking Powder 2 Tsp
  • Salt 1/2 Tsp
  • Whole Milk 1/2 Cup
  • Fresh Blueberries 2 Cups
  • Ground Cinnamon 1/2 Tsp

Instructions

  • Preheat your oven to 375 degrees Fahrenheit. Grease your baking pan with some butter. This stops the cake from sticking later.
  • Whisk the flour and baking powder together. Add a pinch of salt to this mix. Set this dry mixture aside for now.
  • Cream the butter and sugar in a bowl. Use your mixer on a medium speed. The mix should look light and fluffy.
  • Add the egg to the butter mix. Beat it well until it is smooth. Now add the milk and flour slowly. Mix it until just combined.
  • Fold the blueberries into the batter gently. Use a spatula for this part. Do not break the berries while mixing.
  • Spread the batter into your prepared pan. Smooth the top with your spatula. Make sure it reaches every single corner.
  • Mix sugar and cinnamon for the topping. Sprinkle this over the batter evenly. This creates the signature buckle look.
  • Bake the cake for about 40 minutes. The top should be golden brown. A toothpick should come out very clean.

Notes

  • Use fresh berries for the best flavor possible.
  • Do not overmix the cake batter at all.
  • Grease the pan well to avoid any sticking.
  • Let the cake cool before you slice it.
  • Toss berries in flour to stop them sinking.
