Ingredients
  

  • Olive Oil 2 Tbsp
  • Medium Onion 1
  • Large Carrots 3
  • Stalks Celery 2
  • Garlic 3 Cloves
  • Vegetable Broth 6 Cups
  • Medium Potatoes 2
  • Green Beans 1 Cup
  • Can Diced Tomatoes 1
  • Salt 1 Tsp
  • Black Pepper 1/2 Tsp

Instructions
 

  • Place your large stockpot on the stove. Add two tablespoons of olive oil. Turn the heat to medium now. Let the oil get warm and shiny.
  • Add the chopped onions and carrots. Stir them well with your wooden spoon. Cook them until they are soft. This takes about five minutes total.
  • Throw in the celery and minced garlic. Stir the mix for two minutes. You will smell the amazing aroma. Do not let the garlic burn.
  • Pour the vegetable broth into the pot. Add the diced tomatoes with their juice. Stir everything to combine the flavors. Bring the liquid to a boil.
  • Add the cubed potatoes and green beans. Lower the heat to a simmer. Cover the pot with a lid. Let it cook for twenty minutes.
  • Taste the soup with a small spoon. Add salt and pepper to your liking. Turn off the heat carefully. Your soup is now ready to eat.

Notes

  • Cut all your vegetables into equal sizes.
  • Use fresh herbs for a better scent.
  • Do not overcook the green vegetables.
  • Taste the broth before adding more salt.
  • Sauté onions until they are very clear.
