- Blackberries 250 G
- Caster Sugar 2 Tbsp
- Lemon Juice 1 Tbsp
- Water 1 Tbsp
Wash your fresh blackberries in cold water. Pick out any leaves or stems now. Place the fruit into your medium saucepan. Add the sugar and water as well.
Place the pan on a medium heat. Stir the berries gently with your spoon. Let the sugar dissolve into the juice. This will take about three minutes.
Bring the mixture to a light simmer. Cook the berries for five more minutes. They should look soft and very mushy. The liquid will turn a deep purple.
Take the pan off the hot stove. Push the fruit through your fine sieve. Use the back of your spoon firmly. This leaves the seeds in the mesh.
Collect the smooth liquid in your bowl. Stir in the fresh lemon juice now. Let the sauce cool down before serving. It will thicken as it rests.
- Use very ripe berries for the best flavor.
- Stir the pan often to avoid sticking.
