Ingredients
  

  • Strawberries 250 G
  • Caster Sugar 2 Tbsp
  • Lemon Juice 1 Tsp
  • Water 1 Tbsp

Instructions
 

  • Wash your strawberries well in cool water. Remove the green leafy tops with a small knife. Slice the large berries into smaller equal halves.
  • Place the fruit into your small metal saucepan. Add the caster sugar and the fresh lemon juice. Pour in one tablespoon of water to the pan.
  • Set your stove to a medium heat setting. Stir the berries gently as the sugar starts melting. Let the mixture simmer for about five minutes.
  • Remove the pan from the heat very carefully. Use your blender to puree the softened red fruit. Blend until the mixture looks very smooth and liquid.
  • Set your fine sieve over a clean bowl. Pour the hot liquid through the small mesh holes. Use a spoon to push all the juice through.
  • Discard the seeds left inside the mesh sieve. Let the smooth sauce cool down at room temperature. It will thicken slightly as it gets colder.

Notes

  • Use the ripest berries for the best deep red color.
  • Do not boil the sauce for too many minutes.
  • Always strain the sauce while it is still warm.
  • Taste the sauce to see if it needs sugar.
  • Add a splash of vanilla for a deeper flavor.
  • Pick out any bruised or moldy berries before cooking.
  • Use a silicone spatula to scrape the sieve clean.
  • Chill the sauce in the fridge before serving cold.
  • Double the recipe if you have many guests coming.
  • Use frozen berries if fresh ones are out of season.
