Ingredients
  

  • Strawberries 250 g
  • Icing Sugar 2 Tbsp
  • Lemon Juice 1 Tsp
  • Water 1 Tbsp

Instructions
 

  • Wash your strawberries in cool water. Remove the green leafy tops with a knife. Slice the large berries into smaller pieces.
  • Put the berries into your food processor. Add the icing sugar and lemon juice. Add a small splash of water as well.
  • Pulse the machine until the fruit is liquid. Ensure there are no large chunks left. The mixture should look very bright red.
  • Place your sieve over a clean glass bowl. Pour the strawberry liquid into the mesh sieve. This part takes a little bit of time.
  • Use your spoon to push the liquid through. The seeds will stay inside the mesh. Scrape the bottom of the sieve often.
  • Discard the seeds left in the sieve. Your smooth sauce is now in the bowl. Transfer it into a small jar for serving.

Notes

  • Use the ripest strawberries you can find today.
  • Sieve the sauce twice for extra smooth texture.
  • Add more sugar if your berries are sour.
  • Chill the coulis before you pour it on cakes.
  • Use a splash of orange juice for extra flavor.
  • Pick firm berries without any soft brown spots.
  • Scale the recipe up for large dinner parties.
