Whisk your cold double cream in a bowl. Do this until it forms soft peaks. Do not over-mix the cream too much.
Beat the egg whites in another clean bowl. They should be very stiff and white. This adds air to your ice cream.
Gently stir the egg yolks and sugar together. Use a separate bowl for this small task. Mix until the color turns pale yellow.
Fold the cream into the egg yolk mixture. Use a slow motion to keep the air. Add the vanilla extract at this stage.
Add the stiff egg whites to the bowl. Fold them in very carefully with a spoon. Do not knock out the bubbles.
Pour the mixture into your plastic container. Smooth the top with the back of a spoon. Cover it tightly with a lid.
Place the container in the freezer for hours. Wait until it is firm and cold. It usually takes about six hours total.
