Ingredients
  

  • Double Cream 300 ML
  • Large Eggs 2
  • Caster Sugar 50 G
  • Vanilla Extract 1 Tsp

Instructions
 

  • Whisk your cold double cream in a bowl. Do this until it forms soft peaks. Do not over-mix the cream too much.
  • Beat the egg whites in another clean bowl. They should be very stiff and white. This adds air to your ice cream.
  • Gently stir the egg yolks and sugar together. Use a separate bowl for this small task. Mix until the color turns pale yellow.
  • Fold the cream into the egg yolk mixture. Use a slow motion to keep the air. Add the vanilla extract at this stage.
  • Add the stiff egg whites to the bowl. Fold them in very carefully with a spoon. Do not knock out the bubbles.
  • Pour the mixture into your plastic container. Smooth the top with the back of a spoon. Cover it tightly with a lid.
  • Place the container in the freezer for hours. Wait until it is firm and cold. It usually takes about six hours total.

Notes

  • Use very cold cream straight from the fridge always.
  • Fold the egg whites gently to keep it light.
  • Choose a high-quality vanilla extract for the best taste.
  • Make sure your mixing bowls are completely grease-free.
  • Freeze the ice cream in a shallow metal tin.
  • Allow the ice cream to sit out five minutes.
