- Chicken pieces 3 lbs
- All-purpose flour 2 cups
- Large eggs 2
- Whole milk 1 cup
- Salt 1 tsp
- Black pepper 1 tsp
- Vegetable oil 1/2 cup
- Butter 2 tbsp
Prepare the Chicken: Wash and dry your chicken pieces very well. Use paper towels to remove all the moisture.
Season the Meat: Sprinkle salt and pepper over every piece of chicken. Make sure to cover both sides for good flavor.
Set Up Stations: Put flour in one bowl for the dry coating. Mix eggs and milk in another bowl for dipping.
Coat the Pieces: Dip the chicken into the flour bowl first. Shake off any extra flour so it is thin.
Dip in Liquid: Lower the floured chicken into the milk and egg. Make sure the liquid covers the whole piece.
Second Flour Coat: Put the chicken back into the flour once more. This creates the famous Maryland style crust.
Heat the Pan: Add oil and butter to your large skillet now. Wait until the oil is hot and starts shimmering.
Fry the Chicken: Place the chicken carefully into the hot frying pan. Do not crowd the pan with too many pieces.
Flip the Meat: Cook until the bottom side is dark golden brown. Use your tongs to flip each piece over carefully.
Drain and Serve: Move the chicken to a rack with paper towels. Let the extra oil drip off before you eat.
