Equipment

  • Large skillet
  • Tongs
  • Paper towels
  • Whisk
  • Wire Rack
  • Measuring Cups
  • Shallow Bowls

Ingredients

  • Chicken pieces 3 lbs
  • All-purpose flour 2 cups
  • Large eggs 2
  • Whole milk 1 cup
  • Salt 1 tsp
  • Black pepper 1 tsp
  • Vegetable oil 1/2 cup
  • Butter 2 tbsp

Instructions

  • Prepare the Chicken: Wash and dry your chicken pieces very well. Use paper towels to remove all the moisture.
  • Season the Meat: Sprinkle salt and pepper over every piece of chicken. Make sure to cover both sides for good flavor.
  • Set Up Stations: Put flour in one bowl for the dry coating. Mix eggs and milk in another bowl for dipping.
  • Coat the Pieces: Dip the chicken into the flour bowl first. Shake off any extra flour so it is thin.
  • Dip in Liquid: Lower the floured chicken into the milk and egg. Make sure the liquid covers the whole piece.
  • Second Flour Coat: Put the chicken back into the flour once more. This creates the famous Maryland style crust.
  • Heat the Pan: Add oil and butter to your large skillet now. Wait until the oil is hot and starts shimmering.
  • Fry the Chicken: Place the chicken carefully into the hot frying pan. Do not crowd the pan with too many pieces.
  • Flip the Meat: Cook until the bottom side is dark golden brown. Use your tongs to flip each piece over carefully.
  • Drain and Serve: Move the chicken to a rack with paper towels. Let the extra oil drip off before you eat.

Notes

➔ Dry the chicken well so the flour stays on.
➔ Use a meat thermometer to check for safety.
➔ Do not turn the heat up too high quickly.
➔ Add butter to the oil for a better crust.
➔ Let the chicken rest before you take a bite.
➔ Use cast iron pans for the most even heat.
