- Beef Sweetbreads 1 Lb
- Whole Lemons 2
- Salt 1 Tbsp
- Black Pepper 1 Tsp
- Garlic 3 Cloves
- Water 1 Quart
Wash the meat under cool running water. Place it in a bowl with lemon juice. Let it sit for ten minutes to clean.
Place the meat in your large pot. Add enough water to cover every piece. Toss in your garlic and a pinch salt.
Turn the stove to a high heat now. Bring the water to a rolling boil. Let it cook for twenty minutes total.
Drain the hot water from the pot. Place the meat into a bowl of ice. This stops the cooking process immediately.
Peel away any thick or tough membranes. Use your sharp knife for any stubborn bits. Cut the meat into bite-sized cubes.
Pat every piece dry with a paper towel. Season them heavily with salt and black pepper. Make sure they are coated on all sides.
Heat your grill or skillet to high heat. Place the pieces on the hot surface carefully. Do not crowd the pan or the grill.
Sear the meat for five minutes per side. Wait until they look very brown and crispy. Remove them and serve while they are hot.
