Equipment

  • Large skillet
  • Tongs
  • Shallow Bowls
  • Paper towels
  • Wire Rack
  • Whisk
  • Measuring Cups

Ingredients

  • Pork chops Bone-in 4
  • All purpose flour 1 cup
  • House seasoning Salt, Pepper, Garlic 1 tsp
  • Large eggs 2
  • Milk 2 tbsp
  • Vegetable oil 1 cup
  • Black pepper 1/2 tsp

Instructions

  • Season the Meat First, wash and dry your pork chops well. Sprinkle the house seasoning on both sides. Press the spices into the meat firmly. This ensures every bite has great flavor. Let them sit for a few minutes.
  • Prepare the Coating Get two shallow bowls for your station. Put the flour in the first bowl. Mix the eggs and milk together. Put that mix in the second bowl. This is your dipping station.
  • Dredge the Chops Dip one chop into the flour first. Shake off any extra white powder. Then dip it into the egg mix. Finally, put it back in the flour. This makes a double thick crust.
  • Heat the Oil Pour oil into your large skillet. Heat it until it is very hot. You can test it with flour. If it bubbles, it is ready. Be very careful with the hot oil.
  • Fry the Chops Place the meat slowly into the pan. Do not crowd the skillet too much. Cook each side for five minutes. The crust should look deep golden brown. The meat must be cooked through.
  • Drain and Rest Take the meat out of the oil. Place them on the paper towels. Let them rest for three minutes. This keeps the juices inside the meat. Now they are ready to serve.
