Ingredients
  

  • Whole green chiles 4 oz each 2 cans
  • Monterey jack cheese 2 cups
  • Cheddar cheese 2 cups
  • Large eggs 4
  • Milk 1.5 cups
  • All-purpose flour 2 tbsp
  • Salt 0.5 tsp
  • Black pepper 0.25 tsp
  • Paprika 0.25 tsp

Instructions
 

  • Preheat the Oven. Set your oven to 350 degrees first.
  • Prepare the Chiles. Drain the canned chiles and pat them dry.
  • Layer the Chiles. Lay half of the chiles in the pan.
  • Add the Cheese. Sprinkle a thick layer of cheese over chiles.
  • Repeat the Layers. Add more chiles and the remaining cheese.
  • Whisk the Eggs. Mix eggs, milk, and flour in a bowl.
  • Pour the Mixture. Pour the liquid slowly over the cheese layers.
  • Bake the Dish. Bake until the top is golden and firm.

Notes

➔ Drain the chiles well to avoid a soggy casserole.
➔ Grate your own cheese for a much smoother melt.
➔ Let the casserole rest for ten minutes before cutting.
