Equipment

  • Baking sheet
  • Parchment paper
  • Large mixing bowl
  • Rubber spatula
  • Small Microwave Safe Bowl
  • Measuring Spoons

Ingredients

  • Greek Yogurt 2 Cups
  • Scoop Protein Powder 1
  • Peanut Butter 1/4 Cup
  • Honey 2 Tbsp
  • Chocolate Chips 1/2 Cup
  • Coconut Oil 1 Tsp
  • Peanuts 2 Tbsp

Instructions

  • Prepare the pan by lining your baking sheet with parchment paper. Make sure it covers the whole bottom. This makes cleanup very easy.
  • Mix the yogurt base by adding Greek yogurt to your mixing bowl. Stir in the protein powder and sweetener. Mix it until it is very smooth.
  • Add the peanut butter by dropping spoonfuls onto the yogurt. Use a knife to swirl it around. This creates beautiful and tasty patterns.
  • Spread the mixture by pouring the yogurt onto the baking sheet. Use a spatula to spread it thin. Make sure it is even everywhere.
  • Melt the chocolate by putting chocolate chips and oil in a bowl. Heat them in the microwave for 30 seconds. Stir until the chocolate is shiny.
  • Drizzle and top by pouring the melted chocolate over the yogurt. Sprinkle the crushed peanuts on top immediately. Press them down slightly.
  • Freeze the bark by placing the sheet in the freezer carefully. Let it sit for three hours. It must be completely firm.
  • Break and serve by removing the sheet from the freezer. Use your hands to break the bark. Make small or large pieces.

Notes

  • Use full-fat Greek yogurt for a creamier texture.
  • Sift the protein powder to avoid any dry lumps.
  • Natural peanut butter swirls much easier than thick butter.
  • Freeze the pan for at least three full hours.
  • Eat the bark quickly before it starts to melt.
  • Add a pinch of sea salt for better flavor.
