Glass Jar
- Mayonnaise 1 Cup
- Garlic 4 Cloves
- Cilantro 1/4 Cup
- Lime Juice 1 Tbsp
- Olive Oil 1 Tbsp
- Salt 1/2 Tsp
- Black Pepper 1/4 Tsp
Peel your fresh garlic cloves carefully. Remove any brown spots from the skin. Smash them slightly to release the oils.
Put the mayonnaise into your blender jar. Add the fresh lime juice next. Pour in the olive oil slowly now.
Wash your cilantro under cold water. Pat it dry with a paper towel. Put the leaves into the blender.
Sprinkle in the salt and black pepper. Do not add too much salt yet. You can add more later if needed.
Turn the blender on a low speed. Increase the speed to high gradually. Blend until the sauce looks very smooth.
Taste the sauce with a clean spoon. Add more lime if you want tang. Add more garlic for extra spice.
- Use fresh garlic for the most intense flavor.
- Chill the sauce for one hour before serving.
- Use a high-quality mayonnaise for a richer taste.
- Do not use the thick cilantro stems.
- Add a jalapeno if you like spicy food.
- Pulse the blender to avoid over-heating the sauce.
- Check the salt levels at the very end.
- Make sure the cilantro is completely dry first.
