- Unsalted Butter 1/2 Cup
- Granulated Sugar 1 Cup
- Large Eggs 2
- Vanilla Extract 1 Tsp
- Lemon Zest 1 Tbsp
- All-purpose Flour 2 Cups
- Baking Powder 1 Tsp
- Salt 1/4 Tsp
- Drops Food Coloring 3
- Powdered Sugar 1/2 Cup
Cream the Butter and Sugar: Mix the butter and sugar in a bowl. Do this until the mix looks fluffy.
Add Wet Ingredients: Mix in the eggs and vanilla extract. Add the fresh lemon zest now too.
Mix Dry Ingredients: Sift the flour and baking powder together. Slowly add this to your wet mix.
Color the Dough: Divide the dough into three separate bowls. Add a drop of food color to each.
Chill the Dough: Put the dough in the fridge. Let it rest for thirty minutes.
Roll the Balls: Scoop small pieces of dough. Roll them into smooth round balls.
Coat in Sugar: Roll each ball in the powdered sugar. Make sure they are fully white.
Bake the Cookies: Place them on the baking sheet. Bake at 350 degrees for ten minutes.
➔ Use room temperature eggs for a smoother dough mix.
➔ Do not skip chilling the dough before you roll.
➔ Coat the balls twice in sugar for better cracks.
➔ Space cookies two inches apart on the baking sheet.
➔ Take them out while the centers still look soft.
➔ Let them cool on the pan for five minutes.
