- Large English Cucumbers 2
- Medium Red Onion 1/2
- White Vinegar 1/2 Cup
- Water 1/4 Cup
- Granulated Sugar 2 Tbsp
- Salt 1 Tsp
- Black Pepper 1/2 Tsp
- Fresh Parsley 2 Tbsp
Wash your cucumbers under cool running water. Dry them well with a clean towel. Slice them into very thin round circles.
Peel your red onion carefully now. Cut the onion into very thin half-moons. Make sure they are as thin as possible.
Grab your large mixing bowl today. Add the vinegar and the white sugar. Whisk them until the sugar disappears completely.
Add the water to the vinegar mix. Sprinkle in the salt and black pepper. Stir it one more time to combine.
Place the sliced cucumbers into the bowl. Add the thin red onion slices next. Toss them gently to coat with liquid.
Chop your fresh parsley into small bits. Sprinkle the green herbs over the salad. Stir again to distribute the color.
Cover the bowl with plastic wrap now. Put it in the fridge for one hour. This lets the flavors soak into cucumbers.
