Preheat your oven to four hundred degrees Fahrenheit now. Pat the chicken dry using clean paper towels. Dry skin helps the chicken become very crispy later.
Place the chicken inside your large roasting pan. Squeeze the fresh lemon juice over the whole bird. Make sure the juice gets into every single crevice.
Mix the oil and spices in your small bowl. Rub this mixture all over the chicken skin. Use your hands to coat the meat very well.
Stuff the used lemon halves inside the chicken cavity. Add the smashed garlic cloves to the pan as well. This adds extra flavor during the roasting process.
Slide the pan into the hot center rack. Roast the chicken for about one hour and fifteen minutes. The skin should look very golden and dark brown.
Remove the pan from the oven very carefully. Let the meat rest for ten full minutes. Resting keeps the juices inside the chicken meat.
