Ingredients
  

  • Whole Chicken About 4 Lbs 1
  • Olive Oil 1/2 Cup
  • Lemons 2
  • Garlic Cloves 6
  • Dried Oregano 1 Tbsp
  • Sea Salt 1 Tsp
  • Black Pepper 1 Tsp

Instructions
 

  • Preheat your oven to four hundred degrees Fahrenheit now. Pat the chicken dry using clean paper towels. Dry skin helps the chicken become very crispy later.
  • Place the chicken inside your large roasting pan. Squeeze the fresh lemon juice over the whole bird. Make sure the juice gets into every single crevice.
  • Mix the oil and spices in your small bowl. Rub this mixture all over the chicken skin. Use your hands to coat the meat very well.
  • Stuff the used lemon halves inside the chicken cavity. Add the smashed garlic cloves to the pan as well. This adds extra flavor during the roasting process.
  • Slide the pan into the hot center rack. Roast the chicken for about one hour and fifteen minutes. The skin should look very golden and dark brown.
  • Remove the pan from the oven very carefully. Let the meat rest for ten full minutes. Resting keeps the juices inside the chicken meat.
