- Whole Chicken Cut Into 8 Pieces 1
- Olive Oil 1/4 Cup
- Lemon Juice 3 Tbsp
- Dried Oregano 1 Tbsp
- Garlic Powder 1 Tsp
- Smoked Paprika 1 Tsp
- Salt 1 Tsp
- Black Pepper 1/2 Tsp
Wash and dry your chicken pieces very well. Use paper towels to remove all the extra moisture. Dry skin makes the chicken much crispier.
Mix the oil, lemon, and spices in a bowl. Whisk them until the marinade looks smooth and dark. This mixture holds all the delicious flavor secrets.
Coat every piece of chicken in the spice mixture. Use your hands to rub it under the skin. Let the meat sit for thirty minutes for better taste.
Preheat your grill to a steady medium-high heat. Clean the grates so the meat does not stick. Lightly oil the grates using a folded paper towel.
Place the chicken on the grill skin side down. Listen for a loud sizzle when it hits the heat. Close the lid to keep the temperature very hot.
Flip the chicken every ten minutes with your tongs. Baste with extra marinade to keep it very moist. Cook until the internal temperature reaches 165 degrees.
- Always let the meat rest before you cut it.
- Keep the grill lid closed to cook meat evenly.
- Use fresh lemon juice for the best citrus flavor.
- Do not crowd the grill with too much meat.
- Pat the chicken dry before adding any oil.
- Watch for flare-ups to avoid burning the skin.
- Use a thermometer to check the thickest part.
