Ingredients
  

  • Chicken Thighs 8
  • Button Mushrooms 200 g
  • Streaky Bacon 150 g
  • Shallots 8
  • Garlic Cloves 2
  • Tomato Puree 1 Tbsp
  • Dry White Wine 150 ML
  • Chicken Stock 400 ML
  • Fresh Tarragon 1 Tbsp
  • Olive Oil 2 Tbsp
  • Salt 1 Tsp
  • Black Pepper 1 Tsp

Instructions
 

  • Season the chicken thighs with salt and black pepper. Heat oil in your frying pan over medium heat. Brown the chicken skin-side down until it looks golden.
  • Remove the chicken and set it aside on a plate. In the same pan, fry the bacon and shallots. Cook them until the bacon is crispy and brown.
  • Add the sliced mushrooms and crushed garlic to the pan. Cook for five minutes until the mushrooms are soft. Stir the mixture frequently so nothing burns or sticks.
  • Stir in the tomato puree and the white wine now. Let the wine bubble and reduce by half the volume. This removes the harsh alcohol taste from the sauce.
  • Pour the chicken stock into the casserole pot carefully. Add the browned chicken back into the liquid base. Make sure the chicken is mostly covered by the sauce.
  • Place the lid on the pot and simmer gently. Let it cook for forty-five minutes on low heat. The meat should be falling off the bone easily.
  • Stir in the fresh chopped tarragon at the very end. This keeps the herb flavor bright and very fragrant. Serve the dish while it is steaming hot and fresh.

Notes

  • Always brown the chicken well to lock in the juices.
  • Use fresh tarragon instead of dried for the best aroma.
  • Do not boil the sauce too hard or meat toughens.
  • Deglaze the pan with wine to get every flavor scrap.
  • Use chicken thighs with bone-in for a richer, deeper sauce.
  • Check the seasoning at the end and add more salt.
  • Slow cooking makes the chicken much more tender and soft.
