- Unsalted Butter 225 g
- Caster Sugar 225 g
- Self-raising Flour 225 g
- Large Eggs 4
- Baking Powder 1 Tsp
- Instant Coffee Granules 2 Tbsp
- Chopped Walnuts 75 g
- Milk 2 Tbsp
- Soft Butter For Icing 150 g
- Icing Sugar For Icing 300 g
Heat your oven to 180°C. Grease and line two cake tins with paper. This prevents the cake from sticking to the bottom.
Cream the soft butter and sugar together. Use your whisk until the mix is pale. This step adds air to your cake batter.
Add the eggs one at a time. Whisk well after each egg you add. This keeps the mixture smooth and light.
Dissolve the coffee in a spoon of hot water. Pour the coffee liquid into the mixing bowl. Stir it in to see the golden color.
Sift the flour and baking powder together. Fold them into the mix using a spatula. Do not overmix or the cake will be tough.
Fold in the chopped walnuts very gently. Divide the batter between the two prepared tins. Smooth the tops with the back of a spoon.
Bake the cakes for about 25 minutes. They should be firm and springy to the touch. Let them cool completely on a wire rack.
Make a coffee buttercream for the filling. Spread it on one cake and top with the other. Add extra walnuts on top for a pretty look.
