Ingredients
  

  • Pork Belly 1.5 Kg
  • Olive Oil 2 Tbsp
  • Sea Salt 1 Tbsp
  • Black Pepper 1 Tsp
  • Fennel Seeds 1 Tbsp
  • Large Onion 1
  • Medium Carrots 2
  • Garlic 3 Cloves

Instructions
 

  • Preheat your oven to a very high heat. Set it to 220 degrees Celsius. This high heat starts the crackling process.
  • Take your pork out of the fridge. Pat the skin dry with paper towels. Dry skin makes the best crackling.
  • Score the skin with a sharp knife. Make long cuts across the top. Do not cut into the meat. Only cut the fat layer.
  • Rub olive oil all over the skin. Sprinkle plenty of sea salt on top. Rub the salt into the cuts. This makes it very tasty.
  • Place chopped onions and carrots in the tin. Put the pork on top of them. The veggies act like a rack. They flavor the juices too.
  • Put the tin in the hot oven. Roast it for about 30 minutes. The skin will start to bubble up. It looks very exciting!
  • Turn the oven heat down to 160. Cook the meat for two more hours. This makes the meat very tender. It will fall apart easily.
  • Take the pork out of the oven. Let it rest for fifteen minutes. Resting keeps the juices inside the meat. Now you can slice it.

Notes

  • Keep the pork skin as dry as possible.
  • Salt the skin very well for extra crunch.
  • Do not peek in the oven too often.
  • Let the meat rest before you slice it.
  • Use a very sharp knife for clean cuts.
