- Units Chicken Breasts 4
- Butter 25 g
- Plain Flour 1 Tbsp
- Dry Cider 200 ML
- Double Cream 150 ML
- Button Mushrooms 100 g
- Units Shallots 4
- Fresh Sage 1 Tbsp
- Salt 1 Tsp
- Black Pepper 1 Tsp
Cut your chicken into large chunks. Season them with salt and pepper. Dust them lightly with plain flour. Shake off any extra flour now.
Melt butter in your large pan. Add the chicken pieces carefully. Fry them until they turn golden. Remove them and set aside.
Add shallots to the same pan. Cook them until they are soft. Add the mushrooms and stir well. Cook for five more minutes.
Pour in the Somerset hard cider. Scrape the bottom of the pan. This picks up all the flavor. Let the liquid bubble gently.
Add the chicken back to pan. Add the fresh sage leaves now. Cover and simmer for ten minutes. Ensure the chicken is cooked through.
Stir in the heavy double cream. Let it thicken for two minutes. Do not let it boil hard. Taste and add more salt.
