Ingredients
  

  • Elbow Macaroni 1 Lb
  • Unsalted Butter 8 Tbsp
  • All-purpose Flour 1/2 Cup
  • Whole Milk 5 1/2 Cups
  • Salt 2 Tsp
  • Cayenne Pepper 1/4 Tsp
  • Nutmeg 1/4 Tsp
  • Sharp Cheddar Cheese 4 Cups
  • Gruyere Cheese 2 Cups
  • White Bread Crumbs 2 Cups

Instructions
 

  • Heat your oven to 375 degrees now. Butter your baking dish well. This prevents the pasta from sticking.
  • Boil water in your large pot. Add a pinch of salt. Cook the macaroni for several minutes. Drain it before it gets too soft.
  • Melt butter in your saucepan. Add the flour and whisk. Cook it for one minute. Do not let it turn brown.
  • Slowly pour in the milk. Keep whisking the sauce. It will start to get thick. Let it simmer for a few minutes.
  • Remove the pan from the heat. Stir in most of your cheese. Keep stirring until it is all melted. Add your salt and spices now.
  • Pour the cheese sauce over the pasta. Stir it until every noodle is covered. Put the mix into the baking dish. Top with breadcrumbs and remaining cheese. Bake until the top is golden brown.

  • Use fresh cheese blocks.
  • Pre-shredded cheese does not melt well.
  • Do not overcook the pasta.
  • It should be firm before baking.
